Anchovy-garlic pasta

It’s a quick and unpretentious meal for a busy day ahead

INGREDIENTS

8-10 garlic cloves, finely chopped 2 cans anchovy fillets

1/4 cup olive oil

2-3 tsp. lemon juice

Pasta noodles of your choice

Grated parmesan cheese (optional)

Chopped parsley (optional)

PREPARATION

  1. In a large pot, bring lightly salted water to a boil. Cook pasta noodles until al dente and drain. Set aside.
  2. In a skillet, sauté garlic in olive oil over low heat for about 2 minutes. Add in anchovy fillets and break them up with a fork. Cook until garlic just starts to brown. Remove from heat and add in remaining olive oil. Sprinkle with parmesan cheese and chopped parsley.
