What to cook now: Roasted garlic hummus with mixed vegetables

Make your own hummus in four steps


1 1/2 cup garbanzos

6 cloves garlic

2 cups extra virgin olive oil

1 tsp. sesame seeds

1 cucumber, julienned

1 carrot, julienned

2 to 3 red radishes, sliced

5 cherry tomatoes

Paprika for garnish


  1. Pre-heat oven to 180°C.

  2. Roast garlic in the oven for around seven to eight minutes or until golden brown.

  3. Blend garbanzos and garlic. Slowly add olive oil and blend until texture resembles paste.

  4. Spread the roasted garlic hummus on a plate. Add vegetables and garnish with sesame seeds and paprika.
