Yamazaki Heavily Peated 2013
This non-chill filtered expression is made from the peatiest Yamasaki malted barley and was limited to 3500 bottles. It is smokier, richer and more full-bodied than regular Yamazaki single malts. On the nose, burnt barley and biscuits can be noticed, transforming into a deep woody smokiness with time. On the tongue, the dram comes off semi-smoky and briny, with dried raisins and roasted apricots emerging. With touch of water, the peat fade, resulting in classic Yamazaki maltiness. Its medium long finish brings forth slight bitterness reminiscent of a slice of sourdough bread.

II. Hakushu (Yamanashi)
Profile: Suntory’s second distillery (1973), it is the biggest distillery in the world and the only Japanese distillery located in the forest. Its single malts are a key ingredient in most Suntory blended whisky.

Hakushu Heavily Peated 2013
This limited bottling of 3000 is a wonderful expression that retains Hakushu’s strong unique forests characteristics, balanced with salty smokiness. On the nose, minty menthol, pepper and mixed fruits from muscat grapes to pears and green apples envelop this dram’s gentle smokiness. On the palate, brown sugar, salted chocolate, banana and citrus fruits are prevalent. This whisky’s finish is expertly balanced, featuring earthy patines. Rolled in lime and brine. An impressive foray into peat for Suntory’s Hakushu distillery

Its latest release, this single grain has been launched as Suntory’s 4th brand. It has a light champagne color and is composed of 3 different grains matured in diverse casks, from wine to Spanish oak. Sweet and woody hints of pear and dried ripe fruit are on the nose.

Hokuto 12 Years
Out of production since 2010, this pure (blended) malt whisky consists of key malts from both the Hakushu and Yamazaki distilleries. On the nose, it is forest fresh and minty clean, while on the palate, it is silky semi-spicy, dry and smooth, with slight acidity and strong eatery citrus and tropical fruit flavors, particularly lime, yuzu, calamansi, banana, and papaya. On the finish, its medium dryness persists, with delicate oaky mintiness.

Hibiki Mellow Harmony
Released in 2013 and inspired by Hibiki 17 Years, this light golden brown whisky combines Yamazaki malt and Chita grain whiskies that have been matured for over 30 years. Soft whiffs of dried apricot, raisins, cream and caramel are on the nose, while on the tongue, the delicate sweetness of raisins and barley gives way to a bouquet of herbs, faint smoke and woodiness. Its finish is medium long and delicate, leaving traces of well-balanced sweetness and smoke.

NIKKA

I. Yoichi (Hokkaido)
Profile: When he left Suntory, Taketsuru convinced his financial backers that he was moving to Hokkaido to put up an apple juice factory. That apple juice factory was guise for his real motivation—setting up a distillery in one place in Japan whose conditions were most similar to his beloved Scotland. Although the juice business tanked, what rose from its ashes was the foundation of the much beloved Nikka brand. Tradition reigns supreme here, with the usage of Coffey stills and peat charcoal furnaced under age-old Scotch whisky traditions.

II. Miyagikyo (Miyagi)
Profile: Situated in a lush mountain forest in northern Japan, the whisky distilled at Miyagikyo distillery possesses a clearer, softer, smoother and fruitier characteristic compared to Yoichi’s peat and smokiness.
