Vask reopens as Gallery by Chele and only uses local ingredients

Manila-based Spanish chef Jose Luis “Chele” Gonzalez has moved on to greener pastures with the opening of his new space, now called Gallery by Chele. Gallery by Chele is the evolution of an internationally recognized restaurant into a space that now includes a bar, lounge, and dining room.

Gallery by Chele’s new expansive menu showcases local craftsmanship, staying true to their “Modern cuisine, local ingredients” mantra. They underwent meticulous research and development in partnership with esteemed institutions both locally and abroad, as well as collaborated with experts in the culinary, mixology, and agricultural fields.

Diners can choose between a 3-course, 5-course, or 8-course tasting menu or choose to dine a la carte. Vegan and vegetarian options are also available.

Apart from the breathtaking interiors of Chele’s new space, Gallery by Chele is also engaged in the cultivation of an urban farm in the city, conveniently located at the restaurant’s open-air deck in BGC. This “green project” features endemic herbs and vegetables, making the restaurant greatly capable of serving its own produce.

On the other hand, Stvdio Lab is a test kitchen and venue of “educative collaborations” with universities and institutions involved in studies of agriculture, local ingredients, culinary methods, and technology among others. It’s a cross point of research and cuisine, an extension of Gallery by Chele. Stvdio Lab will also have a weekly R&D Tasting Menu featuring a dégustation menu of the recipes and ingredients to be examined by Team Gallery. This intimate setting can accommodate 12 customers, making for a unique dining experience.
