Fluffy bread with no carbs? It’s possible

Bread has grown to be a substantial part of people’s lives, even for the rice-loving Pinoy. Bread goes with just about anything, and while that’s its charm, that’s also its [problem]. Bread is full of carbs. And for those looking to cut down on it or are, for health reasons, unable to eat it, finding a good enough substitute for bread is a challenge.

Enter cloud bread.

While the recipe has existed since 2008, at the peak of the Atkins diet craze, cloud bread is seeing a resurgence in popularity mainly because of how versatile this carb-free treat is.

Here are the facts:

It’s made of only four ingredients, so it’s easy to make yourself.
You only need eggs, cream cheese, cream of tartar, and some sweetener to make this high-protein, carb-free bread alternative. According to the Atkins recipe, each roll of cloud bread using these ingredients contains 45 calories, 4 grams protein, and only 0.7 gram carbohydrates.

It’s nutritious and can fit in a variety of diets.
Given its ingredients, cloud bread makes for a good alternative for people who follow different diets. It works for those who go gluten-free, or follow the Paleo or Ketogenic diets. Edwina Clark R.D. of the personalized recipe recommendation site Yummly, says that aside from being high-protein, cloud bread also contains nutrients “not found in traditional bread, including vitamin A, vitamin D, phosphorus, choline, and selenium.”

You can customize it.
Some say that cloud bread on its own doesn’t taste as much, especially if you’ve grown used to real bread. But since cloud bread only uses a few simple ingredients, it’s easy to add on more elements to suit it to your taste. Mashed recommends adding spices for more flavor, especially if you intend to eat the cloud bread along with something more savory. But if you’re having it for dessert or breakfast, vanilla or cinnamon could also work.

Aside from the intriguing texture (they say it’s like a fluffy, soft meringue), the possible benefits and the versatility of cloud bread make it something interesting to try. But if you’re planning to try these out yourself, just be ready to spend a bit more time in the kitchen.
