Someone’s birthday may be coming up (it could be yours!) and of course, that calls for a birthday treat. While you could just easily call up a bakery and order a cake, there’s just something about the idea of baking your own. Plus, you’ll also be learning a new skill! So roll up your sleeves and try out these easy cake recipes.
Birthday Cake
We’ve said it before and we’ll say it again: The Nolisoli team are huge fans of Bon App´étit. So, first up on this list is Claire Saffitz’s birthday cake recipe. This buttermilk-based sheet cake topped with chocolate cream cheese frosting is quite easy to make. Both toddlers and the young-at-heart will take this as a treat.
Chocolate Cake
Joshua Weissman’s cake recipe skips all the fuss, using basic ingredients like cocoa powder flour, butter and eggs to make a classic chocolate cake. Top it off with frosting that’s just as sweet and rich, and you’ve got yourself a cake you can keep munching on even after the birthday bash.
Tres Leches
If you’re up for a challenge, Binging with Babish has a recipe for a tres leches cake that will satisfy even those who don’t have a sweet tooth. The smooth and creamy dulce de leche complements the white cake, whipped cream and strawberries. You’ll probably think twice about buying that boxed cake batter after you’ve tried this.
Red Velvet à la Mode
For this recipe, cooking mama Judy Ann Santos goes the extra mile and makes her own ice cream and dulce de leche as a topping. It’s a great dessert for any day, but it’s the perfect gift that’s also a great display of your baking chops.

No-Bake Tiramisu Cheesecake
No oven? No problem! This coffee-flavored creamy delight works for both a caffeine and sugar fix. Just make sure you have a hand mixer to make the cream cheese batter. It’s a hassle-free recipe—you just need to be a bit patient in getting the right consistency.
